Easy Taco Chicken Soup

This is something I quickly threw together this past Sunday for lunch all week. It’s very few ingredients and served alongside a salad, a perfect, healthy workday lunch 🙂 Just grab a rotisserie chicken for minimal prep!

Ingredients:

3 cups shredded rotisserie chicken

3/4 container imagine chicken bone broth  (you can use the whole thing, I just had some leftover)

1 cup  celery, chopped

3/4 cup vidalia onion, diced

1 can petite diced tomatoes – no salt added, I used organic because they were on sale

1 tsp coconut oil

1 tsp garlic, minced

1/2 cup fresh hot salsa (I use this one from Harris Teeter, I always have this or their  regular salsa on hand)

1/2 packet taco seasoning (I use this no-salt added one all the time, love it!)

Directions:

Heat oil in a pot on medium heat

Add celery and onion, cook for 2-3 minutes on med-high heat to soften

Add garlic, chicken, and seasoning

Cook for about 1 min

Add in can of diced tomatoes and bone broth. Bring to a boil, then lower heat and simmer for 10 minutes. Serve hot.

 

 

Store in the fridge for a week for lunches. This recipe can also be frozen.
